You can configure catch-all email addresses in your Plesk control panel by following these procedures.

Login to your Control Panel
Select the "Mail" tab

Click on the "Change Settings" button
Under the "Settings" section you'll see "What to do with mail sent to nonexistent users"
Set this to "Forward to Address" and specify the email address if not already specified.
